This small pastry from the Karelia region of Finland blends rustic Nordic flavors and peasant traditions. It’s made with a rye crust filled with cooked rice or barley porridge.

Ingredients
- 1 cup of rye flour
- 1/2 cup of all-purpose flour
- Water and salt
- 1 cup of rice
- 3 cups of milk
- 1 tsp of butter

Preparation
- Cook the rice in milk over low heat until it becomes a thick porridge.
- For the dough, mix the flours with salt and water until flexible.

- Roll into thin discs, fill with the rice, and crimp the edges, leaving the center open.
- Bake at 250°C (480°F) for 10–15 minutes.
- Serve with melted butter or chopped egg.
