World Recipe: Daal (Dalithoy)

Daal or Dalithoy is a traditional dish from southern India, especially popular in the coastal Karnataka region among the Konkani community. This simple yet deeply aromatic recipe is based on cooked lentils seasoned with tempered spices, and it represents the heart of many vegetarian meals in Indian cuisine. It is commonly served as a main dish accompanied by white rice, ghee (clarified butter), and a squeeze of lemon, offering a nourishing and comforting experience.

Ingredients

  • 1 cup toor dal (split yellow lentils)
  • 3-4 green chilies
  • 1 piece ginger (2-3 cm), finely chopped
  • A pinch of turmeric powder
  • Cilantro leaves (optional)
  • 2 teaspoons ghee or coconut oil
  • 1/2 teaspoon mustard seeds
  • 1 dried red chili
  • A pinch of asafoetida (hing)
  • 4-5 curry leaves
  • Salt to taste

Preparation

  • Wash the toor dal and cook it in a pressure cooker along with the green chilies, chopped ginger, and turmeric. Cook for 3 whistles (about 10-12 minutes).
  • Once cooked, bring the dal to a boil in a pot with salt to taste. When it starts boiling, remove from heat.
  • If desired, add chopped fresh cilantro leaves for a fresh touch.

  • In a small pan, heat the ghee or oil. Add the mustard seeds and let them pop.
  • Add the dried red chili, curry leaves, and a pinch of asafoetida. Cook for a few seconds until the spices release their aroma.
  • Pour this aromatic seasoning over the hot dal and cover immediately to keep the flavour.

Serve the dalithoy with white rice, a drizzle of ghee, and a few drops of lemon juice.
