07 Dic World Recipe: Gougères
Originally from the French region of Burgundy, gougères are small savory bites that combine the lightness of choux pastry with the rich flavor of Gruyère cheese. Crispy on the outside and soft inside, they are served as appetizers or side dishes and can be filled with creams, cheeses, or pâtés according to your taste.

Ingredients
- 1 ½ cups water
- 1 tablespoon butter
- 1 ½ cups flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 eggs
- 50 g grated Gruyère cheese

Preparation
- Place the water, butter, and salt in a saucepan. When the mixture starts to boil, add the flour all at once and stir with a wooden spoon until you get a smooth dough that comes away from the sides of the pan.
- Cook for 2–3 more minutes to remove excess moisture.
- Transfer the dough to a mixer or large bowl and mix on medium speed for a few minutes to let it cool slightly. Add the eggs one at a time, beating well after each addition. Then mix in the cheese and pepper.
- Line a baking tray with parchment paper and, using two spoons, form small mounds the size of a walnut, leaving space between them. If you like, sprinkle a bit more pepper on top.
- Bake at 180–190°C for 25–30 minutes, until golden and puffed.

Let them cool before filling, or serve them as they are — warm, with a glass of white wine or champagne.
