Kitoza is a traditional dish from Madagascar, closely linked to everyday life and ancestral food preservation methods. - 2 kg dried meat

Preparation
- Start by cutting the dried meat into strips about 2 centimetres wide and 1 centimetre thick. Using strong string or twine, tie the strips together to form small hanging bundles, making sure they are well secured.
- Place the meat on a charcoal grill and allow it to cook slowly over the fire. The smoky heat brings out the flavour and gives kitoza its distinctive texture.
