Tabouleh is a traditional Arab salad, fresh, light, and full of flavor. Its bulgur base, combined with mint, tomato, and onion, makes it a perfect dish to accompany main courses or enjoy as a starter.

Ingredients
- 120 grams of bulgur
- 1 spring onion
- 1 handful of fresh mint
- 100 ml lemon juice
- 1 tomato
- 3 tablespoons of olive oil
- Salt
- Pepper (optional)

Preparation
- Place a pinch of salt in a saucepan with water and bring to a boil. Add the bulgur and cook according to the package instructions (approximately 10-15 minutes).
- Once cooked, rinse the bulgur with cold water and drain well using a strainer. Set aside.

- Finely chop the spring onion. If you prefer to soften its flavor, place it in a small bowl with water and a good splash of lemon juice to mellow its strength.
- Cut the tomato into small cubes and chop the fresh mint.

- In a large bowl, combine the cooked bulgur, tomato, spring onion, lemon juice, a splash of olive oil, and salt and pepper to taste.
- Mix all the ingredients well, ensuring that the bulgur is fully integrated with the other flavors.

Serve the tabouleh well chilled in a bowl and enjoy this fresh, flavorful salad.
