World Recipes: Summer Pudding

Summer Pudding is a classic dessert from the United Kingdom that was created as a lighter alternative to the heavy baked puddings of the past. Popular since the 19th century, this sweet treat takes advantage of the abundance of summer berries and replaces traditional pastry with bread, which absorbs the natural fruit juices and creates a soft, juicy texture. The best part is that you do not need an oven, and the preparation is simple and practical.

Ingredients

  • 1 loaf of sandwich bread (sliced bread)
  • 200 g strawberries
  • 200 g plums
  • 150 g raspberries
  • 150 g blueberries
  • 150 g blackberries
  • 150 g cherries
  • 500 g sugar
  • Juice of 1 lemon, to taste
  • Neutral oil, to taste

Preparation

  • Cut the plums into wedges, the strawberries into quarters, and the cherries into halves. Place them in a pot together with the raspberries, blueberries, blackberries, sugar, and lemon juice.
  • Mix well and once it starts boiling, cook for about 3 minutes. Set aside without straining.
  • Brush a semi-spherical pyrex mould with neutral oil and line it with plastic wrap.
  • Cut the bread into 1 cm slices and remove the crusts. Place a circle of bread at the base and cover the sides of the mould, slightly overlapping the slices.
  • Fill with the fruit mixture and some of its juice. Cover with more bread and moisten it with the cooking syrup.
  • Cover with plastic wrap and refrigerate for 8 hours.
  • Unmould, pour some more syrup over the pudding, and serve with fresh fruit and lightly whipped cream.
