Khachapuri is one of the most iconic dishes from Georgia, a country in the Caucasus with a rich culinary tradition. The name comes from the Georgian language and literally means “bread with cheese.” While there are different regional versions, the most famous is Adjaruli Khachapuri — known for its boat-like shape filled with melted cheese and topped with an egg. This bread is a symbol of hospitality and is usually served hot, with butter, to be shared at family gatherings or celebrations.

Ingredients
For the dough:
- 300 g strong flour
- 75 g warm water
- 75 g milk
- 6 g fresh yeast
- 10 g extra virgin olive oil
- 6 g salt
- 3 g sugar
- 0.5 beaten egg (for the dough)

For the filling:
- 100 g grated mozzarella cheese
- 100 g feta cheese
- 0.5 beaten egg
- 3 eggs (one per bread)
- 15 g butter
- Extra beaten egg for brushing

Preparation
- Dissolve the yeast in the warm water and mix with the milk, half a beaten egg, salt, sugar, and oil. Place the flour in a bowl, make a well in the centre, and pour in the liquid mixture. Mix until combined, then knead until you get a smooth and elastic dough. Cover and let it rest in a warm place for 1–2 hours, or until it doubles in size.
- Meanwhile, mix the cheeses with the remaining half egg. Divide the dough into three parts, roll each into an oval shape, and spread the cheese filling, leaving space at the edges. Fold the sides and twist the ends to form a boat shape.
- Brush the edges with beaten egg and bake at 220°C for 12–14 minutes. Take them out, add a raw egg to the centre of each bread, and bake for another 3–4 minutes, until the egg white is set.

Serve hot with a bit of butter on top. Simply irresistible!
