World Recipe: Stargazy Pie

Originally from Cornwall, this fish pie stands out for the sardine heads poking through the pastry, “gazing at the stars,” which gives the dish its name.

Ingredients:

  • 6 fresh sardines (cleaned but with heads intact)
  • 250 g puff pastry
  • 2 hard-boiled eggs, chopped
  • 2 boiled potatoes, sliced
  • 1 onion, chopped
  • 100 ml cream
  • Salt and pepper to taste
  • Butter

Preparation:

  • Preheat the oven to 200°C.
  • Sauté the onion in butter. Mix with the potatoes and boiled eggs, season with salt and pepper.
  • Place the mixture in a pie dish and arrange the sardines with their heads sticking out.

  • Partially cover with the puff pastry, leaving the heads visible.
  • Bake for 25-30 minutes until the pastry is golden brown.
