18 May Weirdest recipes in the world: Casu Marzu
Casu marzu is a sheep’s milk cheese that contains live fly larvae, known as “the most dangerous cheese in the world.” Its extreme fermentation process gives it a creamy texture and a strong, unique flavor.

Ingredients:
- 1 pecorino sardo cheese
- Cheese fly larvae (Piophila casei)

Preparation:
- Allow a pecorino sardo cheese to mature in an open environment to attract the cheese fly.
- The flies deposit eggs on the cheese, and when they hatch, the larvae start to break it down, giving the cheese its creamy texture.
- When the cheese reaches its ideal fermentation point, it’s consumed directly, with or without the larvae.

Due to health risks, casu marzu is banned in the European Union, but it continues to be produced clandestinely in Sardinia.
