World Recipes: Fair-Style Salad

If there’s one salad that never misses at celebrations in Panama, it’s the famous fair-style salad. Also known as red salad or potato and beet salad, this dish became popular at parties, carnivals, and family gatherings, where it’s always served as a side to meats or main dishes. Its name comes from those very events—local fairs—where it was served as a simple, affordable, and filling side dish.

Ingredients

  • 3 eggs
  • 1 can of chopped beets
  • 1 can of chopped carrots
  • 2–3 potatoes
  • Mayonnaise to taste
  • Salt and pepper to taste (optional)

  • Preparation
  • Boil the eggs and potatoes together until fully cooked.
  • Once they are slightly warm, peel both the potatoes and the eggs carefully.
  • Cut the potatoes into small cubes and do the same with the eggs.
  • In a large bowl, combine the potatoes, eggs, carrots, and beets.
  • Gradually add the mayonnaise, then season with salt and pepper to taste. Mix well until everything is fully combined and creamy.

Let it rest in the fridge for a while before serving. This helps the flavors blend better and makes it even more delicious.
