World Recipes: Fufu

Fufu is a traditional dish from West Africa that has won over taste buds in various regions of the continent. It is a thick, smooth, and elastic puree made from starches that are boiled, mashed, and mixed. It is a versatile preparation that can be enjoyed in many ways, and here’s how to make it at home.

 

Ingredients:

– 750 g cassava

– 1 green plantain (optional, can be replaced with more cassava)

– Salt (optional)

 

Instructions:

  1. Peel the cassava and cut it into pieces, removing the central fiber. If using green plantain, peel and cut it into pieces, removing seeds if desired.
  2. Place the cassava and plantain in a blender. Cover with water and add salt if desired. Blend until you get a smooth puree.
  3. Cook over low heat for 30 minutes, stirring occasionally. Then, cover and cook for an additional 10 minutes, adding a splash of water if necessary.
  4. Heat the puree in a covered container for 10 minutes. Stir and repeat the process until you achieve the desired consistency.
  5. Place the fufu in a damp bowl and mix it several times, stretching the edges inward to get a uniform texture.
  6. Cover the bowl with a damp cloth and set aside until ready to serve.
