Lamington cakes are a classic dessert from Australia and New Zealand, widely enjoyed in cafés, bakeries and at special celebrations. They are soft sponge cake cubes dipped in rich chocolate sauce and then coated in desiccated coconut. This simple but delicious combination gives them a unique texture and flavour that has made them a culinary icon of that part of the world. Ingredients:
- 2 tablespoons desiccated coconut
- 4 ounces butter
- ¾ cup fine sugar
- 1 tablespoon vanilla powder
- 2 eggs
- 2 cups flour
- 1 teaspoon baking powder
- A pinch of salt
- ½ cup milk
- 450 g icing sugar
- 4 tablespoons cocoa powder
- 1 tablespoon butter
- 1 cup hot milk

Preparation:
- Cream the butter and sugar, then add the vanilla and beaten eggs.
- Gradually mix in the dry ingredients, alternating with the milk, and pour the batter into a greased baking tin.
- Bake at 180°C for 40–50 minutes and allow the cake to cool for a day. Cut into cubes of about 5 cm.
- To make the chocolate sauce, mix the icing sugar, cocoa, butter and hot milk until smooth and slightly thick.
- Dip each cake cube into the sauce, then roll it in desiccated coconut until fully coated.

This dessert is perfect with tea or coffee and, thanks to its coconut and cocoa flavours, it fits beautifully into African-style gatherings—ideal for sharing with family and friends.
