World Recipes: Maschi

Maschi is a traditional dish from Sudan, well loved for its simplicity and comforting flavour. It is made with large tomatoes stuffed with rice and beef, then gently cooked until they become juicy, fragrant, and deeply satisfying. This kind of hearty, home-style cooking feels familiar across many African kitchens, where fresh ingredients and slow cooking bring people together.

Ingredients:

  • 1 kg beef, cut into small pieces
  • Salt and black pepper, to taste
  • Chopped garlic
  • Dill
  • Cooking oil
  • 1 cup of rice
  • 8 large tomatoes

Preparation:

  • Wash the tomatoes and cut a small lid from the top of each one. Carefully scoop out the pulp and set it aside for later use.
  • In a pot with a little oil, sauté the beef pieces and season with garlic, salt, pepper, and dill to taste. Cook until the meat starts to brown and release its flavour.
  • Add the rice and mix well with the meat. Pour in the reserved tomato pulp and a small splash of water. Let it cook over medium heat until the rice is almost done.
  • Stuff the tomatoes with the rice and meat mixture and gently place the lids back on top.
  • In a wide pan with a little oil, carefully fry the stuffed tomatoes, turning them slowly so they cook evenly on all sides without breaking.
  • Maschi is a warm, nourishing dish that reflects the shared culinary traditions found across Africa, where simple ingredients are transformed into meals meant to be enjoyed together.
