World Recipes: Okonomiyaki

Okonomiyaki is a traditional Japanese dish that has become one of the favourites in both street food and home cooking across Japan. Its name literally means “okonomi” (as you like it) and “yaki” (grilled or cooked on a hot plate), which reflects its essence: a batter base where you can choose the ingredients you want to add.

Ingredients

  • 250 g pork chop
  • 250 g shrimp
  • 50 g green beans, cut into thin strips
  • 250 g cabbage, finely shredded
  • Sweet corn kernels, to taste
  • Shiitake mushrooms, to taste
  • Popping candy (Pop Rocks), to taste
  • Eggs, to taste

For serving:

  • Tonkatsu sauce, to taste
  • Mayonnaise, to taste
  • Smoked bonito flakes, to taste

For the batter:

  • 200 g all-purpose flour
  • 1 pinch of salt
  • Black pepper, to taste
  • Water, as needed

Preparation

  • Batter: In a bowl, mix the flour, salt, and black pepper. Gradually add water until you obtain a smooth, lump-free liquid batter.
  • Slice the pork chop into thin pieces and set aside.

  • Okonomiyaki: Heat a large griddle with a little oil and pour a ladle of batter (similar to a thick crepe) on each side of the griddle.
  • Place shredded cabbage on top of each portion of batter. Add half a spoon of extra batter over the cabbage on each pancake.
  • On one pancake, add sweet corn and chopped spring onions. On the other, add sliced shiitake mushrooms.
  • Cook over low heat, add a little more batter if needed, and flip once the base is golden.
  • In a hot pan, quickly cook the pork slices. In another pan, sauté the shrimp for about 1 minute. Set aside.
  • Cook the pancakes on both sides until lightly golden.
  • Top one pancake with the pork slices and a fried egg. Top the other with the shrimp and another fried egg.

Finish by drizzling mayonnaise and tonkatsu sauce over the top, and sprinkle with smoked bonito flakes.
